Yogurt with Pineapple, Nuts & Honey
Three minutes from counter to table. No pan, no heat, no timer. 29 grams of protein assembled, not cooked.
The pineapple does something most people never notice. It contains bromelain, an enzyme that starts breaking down the yogurt's casein protein the moment the two meet in the bowl. That same enzyme is what makes your tongue tingle after eating fresh pineapple. Frozen pineapple keeps most of its bromelain intact, and because there is no cooking step, the enzyme stays active.
Ingredients
- pineapple chunks (frozen) 0.5 cup
- yogurt, nonfat 1 cup
- mixed nuts, unsalted 1 ounce
- honey 0.5 tablespoon
Method
-
Let the pineapple chunks thaw for a moment.
-
Scoop the yogurt into a bowl.
-
Add the pineapple on top of the yogurt. Sprinkle the nuts over the pineapple and drizzle honey.
-
Serve immediately and enjoy!
Let the pineapple sit out for two to three minutes before assembling. A brief thaw softens the chunks enough to eat comfortably while keeping the bowl cold and fresh.
Pineapple contains bromelain, the same enzyme responsible for the tingling on your tongue after eating fresh pineapple. A 2023 study found that bromelain breaks down all three types of casein in dairy. Nonfat yogurt is almost entirely casein. Frozen pineapple retains most of its bromelain. Microwaving to thaw, on the other hand, destroys the vast majority.

Can I use Greek yogurt instead of regular nonfat?
Yes. Greek yogurt is strained, so it packs more protein per cup, typically around 17 to 20 grams compared to about 13 for regular nonfat. The macros on the page are based on the original recipe, so swapping will change the totals. Greek yogurt is also casein-dominant, so the bromelain interaction still applies.
Is 29 grams of protein enough for a meal?
Research has shown the body can use well over 30 grams of protein in a single sitting, so nothing goes to waste here. Whether this bowl works as a full meal or a larger snack depends on your daily calorie and protein targets. At 400 calories, it sits between a light meal and a substantial snack.

Freezing preserves the vast majority of pineapple’s bromelain. A 2023 study confirmed that bromelain acts on all three types of casein found in yogurt. Cooking or microwaving destroys most of the enzyme. The recipe’s gentle counter-thaw keeps bromelain active.
