Ingredients · 1 serving

  • brown rice 3 ounces
  • green beans (frozen) 2 cups
  • onion 0.5
  • garlic 1 clove
  • black beans 3 ounces
  • olive oil 1 tablespoon
  • tomato paste 1 teaspoon
  • Sriracha sauce 1 teaspoon
  • 96% lean ground beef 3 ounces

Method · 15 min

  1. Cook the rice according to the instructions on the package.

  2. Add the green beans to a pot of boiling water and cook for 6 minutes until al dente.

  3. Finely chop the onion, crush the garlic clove, and rinse the black beans in a colander with cold water. Let them drain well.

  4. Heat the oil in a pan. Add the onion and sauté until translucent, then add the garlic, tomato paste, and Sriracha and sauté for another minute. Add the ground beef and black beans, stir everything well and cook for 4 minutes. Season with salt and pepper.

  5. Serve the rice, green beans, and ground beef on a plate.

Tip

Sugar snaps make a great swap for the green beans if you want a lighter crunch. They cook even faster in boiling water.

Science

This plate packs 87 grams of carbs in a single sitting. Pooled evidence from over 5,000 participants found no independent effect of carb quantity on fat loss when calories were matched. The carb count on the label is not what determines whether you lose fat — the calorie total is.

Behind this recipe

Can I eat 87 grams of carbs at dinner and still lose fat?

Yes. Pooled research covering over 5,000 participants found that fat loss depends on your total calorie balance, not on how many carbs you eat at one sitting or what time of day you eat them. This plate's 87 grams of brown rice and black beans are fuel, not a problem, as long as your overall intake fits your goal.

Can I use white rice instead of brown rice?

Absolutely. White rice cooks faster and works the same way in this dish. You will lose some fiber — brown rice contributes a few grams — but the black beans and green beans still carry the bulk of the 21 grams of fiber in this plate.

Is this good for meal prep?

Rice, beans, and ground beef all hold up well in the fridge for three to four days. Cook a double batch, store the components separately, and reheat the beef-and-bean mix in a pan for two minutes. The green beans are better reheated quickly in a dry pan than microwaved.
