Noodles with Chicken & Mushrooms
Nine ounces of mushrooms in a single bowl. That ratio flips what most noodle soups look like — the mushrooms fill the broth, and 84 grams of chicken breast works alongside them in thin slices that cook in the same pot.
The whole thing runs on a vegetable bouillon base. Simmer the chicken and quartered mushrooms together for eight minutes, pour the broth over cold-rinsed whole wheat noodles, and finish with scallion rings. 550 calories, 37 grams of protein, and 15 minutes from start to table.
The cold rinse on the noodles matters. It stops them from going soft when the hot broth hits, giving you a texture contrast that separates this from the overcooked-pasta-in-soup category.

Ingredients
- noodles, whole wheat 3 ounces
- olive oil 1 tablespoon
- chicken breast 3 ounces
- mushrooms 9 ounces
- scallion 1
- vegetable bouillon 1 cube
- water 1.5 cup
Method
-
Cook the noodles according to the instructions on the package. Rinse them under cold running water and mix with the oil.
-
Cut the chicken breast into thin slices. Quarter the mushrooms. Slice the scallion into thin rings.
-
Bring the bouillon cube with water to a boil and add the chicken and mushrooms. Let it simmer for 8 minutes until the chicken is cooked through.
-
Place the noodles in a deep bowl and pour the broth over it. Distribute the chicken and mushrooms on top. Sprinkle with the scallion.
Try brown mushrooms instead of white. They hold up better in hot broth and bring a fuller, nuttier flavor that deepens the bouillon base.
Why This Works
Behind this recipe
Can my body actually use 37 grams of protein from one meal?
Yes. The idea that anything above 30 grams per meal gets wasted has been tested and disproven. Research tracking protein doses from 25 to 100 grams found the body continues processing protein well beyond the old ceiling — it just takes longer at higher amounts. At 37 grams, this meal is well within what your body handles in a single sitting.
Read the full evidence reviewWhy does this recipe use so many mushrooms?
Mushrooms are about 92% water, which means 252 grams of them adds serious volume to the bowl without adding many calories. A University of Minnesota study found that protein-matched portions of mushrooms produced greater fullness and less hunger than meat portions. You get the physical fill from the mushrooms and the protein from the chicken — both working together.
Can I skip the cold rinse on the noodles?
You can, but you will notice the difference. Rinsing stops the cooking and removes surface starch, which keeps the noodles from clumping and turning mushy when the hot broth goes over them. If you skip the rinse, the noodles absorb the broth faster and lose their texture within a few minutes.
