Cheese, Turkey & Apple Wrap
No heat, no pan, no timer. Spread mustard on a whole wheat wrap, layer turkey breast with shredded cheddar and thin apple strips, add mixed salad, and roll.
The apple is the move most wraps skip. Thin strips tucked between cheese and turkey add a tart crunch that prevents the whole thing from flattening into one soft, forgettable note. 350 calories and 5g of fiber from a lunch that builds faster than it disappears.

Ingredients
- apple 1
- tortilla wrap, whole wheat 1
- yellow mustard 0.5 teaspoon
- turkey breast 2 slices
- cheddar cheese, shredded 1 ounce
- mixed salad 1 handful
Method
-
Cut the apple into quarters and remove the core. Slice the apple into thin strips.
-
Spread mustard on the wrap and place the turkey breast, cheese, apple strips and mixed salad on top. Season with salt and pepper.
-
Roll up the wrap and cut it in half. Serve on a plate.
Slice the apple right before rolling. Exposed apple flesh browns within minutes, and a wrap packed for later looks worse than it tastes. If you are making this ahead, a light squeeze of lemon on the strips buys a few extra hours.
Cheddar is a casein-rich cheese, and apples carry chlorogenic acid — a polyphenol concentrated in the skin. When casein and chlorogenic acid meet during digestion, the protein’s open structure binds with the polyphenol. A 2023 digestion simulation found that the pairing produced 1.68 times the antioxidant capacity of either component alone.

Can I make this wrap ahead of time?
You can roll the wrap up to 4 hours ahead and keep it refrigerated. The mustard acts as a moisture barrier between the tortilla and the wet ingredients. Cut it in half right before eating — exposed edges dry out faster than a sealed roll.
Why put apple in a savory wrap?
Texture contrast. Turkey and cheddar are both soft and rich. Apple strips add a tart crunch that breaks the monotony and keeps each bite distinct. The combination is borrowed from charcuterie boards, where apple and aged cheddar are a classic pairing.
Does it matter that the apple is uncooked?
For texture, yes — cooking turns apple into something completely different. For the polyphenols inside, also yes. Chlorogenic acid, the main polyphenol in apple skin, stays intact when the fruit is raw. Heat breaks it down. Research found that when chlorogenic acid from fruit meets casein from dairy like cheddar during digestion, the combination delivers 1.68 times the antioxidant capacity of either one alone.
