Ingredients · 1 serving

  • onion 0.25
  • garlic 1 clove
  • olive oil 1 tablespoon
  • turmeric 1 pinch
  • cherry tomatoes 6
  • spinach 1 handful
  • cauliflower rice 3 ounces
  • egg 1

Method · 15 min

  1. Finely chop the onion and crush the garlic.

  2. Heat half of the oil in a pan and sauté the onion until translucent. After 2 minutes, add the garlic and turmeric and cook for another 2 minutes.

  3. Halve the cherry tomatoes and add them to the pan with the spinach. Sauté for 2 minutes. Finally, add the cauliflower rice and cook for about 4 minutes until it softens.

  4. In another pan, heat the remaining oil and fry the egg.

  5. Serve the cauliflower rice stir-fry topped with the egg.

Tip

Fresh cilantro or flat-leaf parsley, torn and scattered over the egg just before serving, adds a brightness that balances the turmeric and tomato.

Science

Stir-frying cauliflower produces nearly eight times more of its protective compounds than eating it raw. Inside every floret, two enzymes compete: one builds bioactive isothiocyanates, the other intercepts them and converts them to nothing. Brief dry heat knocks out the interceptor while leaving the builder intact. Boiling does the opposite, washing both away into the cooking water.

Does cooking cauliflower destroy the nutrients?

For one class of compounds, the opposite is true. A 2020 study tested cauliflower under six cooking methods and found that stir-frying produced nearly 8 times more isothiocyanates than raw cauliflower. The reason: brief dry heat destroys a competing enzyme that normally diverts those compounds into inactive byproducts. Boiling and stewing had the opposite effect, reducing yield by up to half.

Is cauliflower rice actually lower in carbs than regular rice?

By a wide margin. Three ounces of cauliflower rice has roughly 4 grams of carbs, compared to about 36 grams in the same weight of cooked white rice. This entire stir-fry totals 9 grams. Whether going that low helps with fat loss depends more on your total calorie and protein intake than the carb number itself.

Can I eat this on a keto diet?

At 9 grams of carbs per serving, this fits within most keto targets for a single meal. One thing worth knowing: a metabolic ward study found that very-low-carb diets can drop weight that is not predominantly fat. One low-carb stir-fry in a balanced day is not the same as a sustained keto protocol.
