Behind this recipe

Does the carrot in this snack actually deliver beta-carotene?

Carrots are loaded with beta-carotene, but a crossover trial found that without fat at the same meal, almost none of it reaches your bloodstream. This snack has just one gram of fat, so the carrot is mostly here for crunch and fiber. The same researchers found that adding even a small amount of fat to the meal changed the absorption picture entirely.

Can I make these ahead for the week?

Wrap them, store in an airtight container in the fridge, and they hold their crunch for a day or two. The turkey keeps moisture away from the carrot surface. After that the carrot starts going soft.
