The olive oil sits to the left of the stove, next to the vinegar, where it belongs — salads, marinades, cold things. When the pan heats up, your hand goes to the other bottle. Canola. Avocado oil. Whatever earned its place by the burner because someone, somewhere, showed you a number.
Smoke point. You picked it up from a cooking blog, a product label, or a parent who absorbed it first — a chart ranking oils by the temperature where they start to smoke. Olive oil lands in the middle. Canola and avocado oil sit near the top. The hierarchy seemed clear: higher number, safer for cooking. It settled into your kitchen as a permanent rule, and you stopped questioning what the number actually measures.
Is Olive Oil the Healthiest Cooking Oil?
Extra virgin olive oil produces the fewest toxic byproducts of any common cooking oil when heated. The metric most people use to judge oil safety — smoke point — does not predict it. In a head-to-head test of ten oils, those with the highest smoke points produced the most degradation products. Coconut oil finishes a close second to EVOO.

Smoke point is the temperature at which an oil produces visible wisps of vapor. That is all it measures. It does not tell you whether the oil is breaking down into compounds that could harm you. For that, food scientists measure something different: polar compounds, the oxidation products that include aldehydes and short-chain fatty acids. The European Union sets the line at 25% polar compounds — above that, a cooking oil is legally unfit for consumption.
Ten cooking oils, heated to 240°C and held at 180°C for six hours — conditions no home kitchen reaches — produced a ranking that looked nothing like the smoke point chart. Extra virgin olive oil came out with the fewest toxic byproducts: 8.47% polar compounds. Coconut oil followed at 9.30%, close enough that the difference is not clear-cut. The oils everyone reaches for — the ones with the highest smoke points — fared worst. Canola produced 22.43%. Grapeseed hit 19.79%.
The correlation between smoke point and polar compound production was 83% positive. The higher the smoke point, the more degradation products the oil produced.
The number most people use to choose a cooking oil does not just fail to predict safety — it correlates with worse performance.
The chemistry is simple enough to say in one breath. Olive oil is rich in monounsaturated fatty acids and natural polyphenol antioxidants, both of which resist breaking down under heat. The high-smoke-point oils — canola, grapeseed, sunflower — are rich in polyunsaturated fatty acids, which degrade faster when heated. The fat composition that gives them a high smoke point is the same composition that makes them produce more toxic byproducts when you actually cook with them.
An independent review from the University of Barcelona, backed entirely by public research grants, confirmed that polar compounds — not smoke point — are the valid measure of cooking oil safety. The head-to-head comparison of all ten oils, however, was conducted by Modern Olives Laboratory Services, an Australian olive oil producer’s lab. Coconut oil’s second-place finish deserves its own honest moment. At 9.30% versus EVOO’s 8.47%, the error bars overlap. The difference between first and second is not statistically definitive. If coconut oil is your preferred cooking fat, the safety data does not argue against it.
What the chemistry shows, a working kitchen confirms. Across FitChef’s database of 825 recipes designed by professional nutritionists, 614 use olive oil as the cooking fat. Not one uses canola. Not one uses avocado oil. That is a procurement decision, not safety evidence — but it shows a professional kitchen can run almost entirely on the oil the science says degrades least.
