Apple & Cheese Sandwich
Warm toasted whole wheat, cold crisp apple slices, and sharp shredded cheddar. The honey-mustard spread underneath ties the three textures into one bite.
Five ingredients, seven minutes, no cooking beyond the toaster. The 8 grams of fiber come from two different sources: pectin from the apple and bran from the whole wheat bread. The combination keeps this sandwich feeling bigger than its 373 calories.
Ingredients
- bread, whole wheat 2 slices
- apple 1
- yellow mustard 0.5 tablespoon
- honey 1 teaspoon
- cheddar cheese, shredded 1 ounce
Method
-
Toast the slices of bread in a toaster or on a skillet until they are lightly golden.
-
Thinly slice the apple into small, bite-sized pieces.
-
In a small bowl, mix together the mustard and honey. Spread the honey mustard mixture on one slice of the toasted bread.
-
Layer the sliced apple on top of the honey mustard. Sprinkle the cheese on top of the apple slices.
-
Cover the sandwich with the other slice of toasted bread. Serve and enjoy!
Slice the apple as thin as you can manage. Thick rounds slide out when you bite down, pulling the cheese and honey mustard with them. Paper-thin slices stay layered, and every bite gets the full sweet-sharp-tangy combination instead of just bread.
Cheddar and apple are not just a flavor pairing. Cheddar's casein protein and apple skin's chlorogenic acid interact during digestion: researchers found the combination produced 68% more bioaccessible antioxidant capacity than either eaten alone (Hamzalioglu et al., 2019). The raw, unpeeled apple preserves the chlorogenic acid that drives this interaction.

Why does cheddar work so well with apple?
Sharp cheddar and crisp apple is one of the oldest flavor pairings in cooking, and the contrast is real: the sweetness of the fruit pulls the salt and funk out of the cheese. There is also a nutrient layer underneath. Cheddar's casein interacts with the chlorogenic acid in apple skin during digestion, producing 68% more bioaccessible antioxidant capacity than either food alone (Hamzalioglu et al., 2019). Raw, unpeeled apple keeps that chlorogenic acid intact.
Is 15 grams of protein enough for a full meal?
It depends on the rest of your day. At 15 grams, this sandwich works best as a lighter lunch or a substantial snack. If you need more protein in one sitting, pair it with a glass of milk, a hard-boiled egg, or some Greek yogurt on the side. The research on per-meal protein thresholds varies, but 15 grams is well within the range your body can use efficiently at one time.
Can I swap cheddar for another cheese?
Any aged cheese works. Gouda, Gruyere, and aged Swiss all bring the sharp, concentrated flavor that balances the apple's sweetness. Softer cheeses like brie or cream cheese shift the sandwich toward mild and creamy rather than sharp and textured. Both versions taste good, but the contrast is strongest with a harder, aged variety.
