Egg salad & hummus sandwich
Three slices of whole wheat, stacked like a club sandwich. Ingredients
- egg 1
- cottage cheese 4% milkfat 3 tablespoons
- yellow mustard 1 teaspoon
- bread whole wheat 3 slices
- arugula 1 handful
- raisins 1 ounce
- hummus 1 tablespoon
Method

Boil the egg for 7 minutes. Cool under cold water, peel it and mash it with a fork in a bowl. Mix with the cottage cheese, mustard, pepper and salt.

Top the first slice of bread with half of the arugula, the egg salad, and half of the raisins. Place the next slice on top, spread the remaining arugula, hummus, and the rest of the raisins. Finish with the final slice.

Cut diagonally, optionally insert a toothpick.

Can I use lettuce instead of arugula?
You can, but you will lose most of the carotenoid benefit. Arugula ranks among the highest leafy greens for lutein and beta-carotene, the pigments the egg yolk helps absorb. Iceberg lettuce carries almost none. Spinach or baby kale would keep the carotenoid density if you prefer a milder green.
