Ingredients
- pumpkin (frozen) 7 oz
- bulgur 3 oz
- olive oil 1 tbsp
- thyme, dried 1 tsp
- spinach 4 handfuls
- feta cheese, crumbled 1.5 oz
- mixed nuts, unsalted 1 oz
Method

Preheat the oven to 400°F (210°C).

Thaw the pumpkin pieces.

Cook the bulgur according to the package instructions.

Spread the pumpkin pieces on a baking sheet and drizzle with oil. Season with thyme, salt, and pepper and roast for 25–30 minutes, or until tender and lightly caramelized, stirring halfway through.

Meanwhile, place the cooked bulgur in a large bowl and mix in the spinach. The heat from the bulgur will slightly wilt the spinach.

Add the roasted pumpkin and gently combine.

Crumble the feta over the dish and sprinkle the nuts on top.

Season to taste with salt and pepper.

Serve warm or at room temperature.

Is the calcium in feta actually absorbed when eaten with spinach?
Yes. Spinach contains oxalate crystals that trap the calcium inside the spinach itself, limiting spinach calcium absorption to about 5.1%. But dairy calcium from cheese, milk, or yogurt uses a separate absorption pathway. A crossover trial found that dairy calcium absorption stayed at 35.8% when consumed alongside spinach. The oxalates bind what’s already locked in the leaf. They don’t reach the feta.
Can I swap bulgur for a different grain?
Quinoa, farro, or couscous all work. Bulgur is a whole grain with a glycemic index around 46–48 and cooks quickly. If you swap, make sure the replacement is hot enough to wilt the spinach when you toss them together in Step 5.
Does roasting the pumpkin at high heat destroy the nutrients?
Carotenoids, the orange pigments in pumpkin, are relatively heat-stable. Roasting with fat actually improves carotenoid bioaccessibility because the fat helps dissolve them for absorption. The olive oil drizzled on in Step 4 serves double duty: flavor and nutrient delivery.
