Are Raw Eggs Better for Muscle Than Cooked?
Protein absorption measures how many amino acids travel from your gut into your blood. The reason is dose. Thirty grams of protein — even at 51% absorption — still delivers more amino acids than the muscle-building signal needs to reach full capacity. The threshold to saturate that signal is roughly 19 grams of protein for a 75-kilo person. Raw eggs at 51% digestibility clear that line with room to spare at a five-egg serving. Once the signal is full, extra amino acids in circulation are surplus. Boiled eggs sent more to the bloodstream. The muscles had already stopped listening.
The caveat worth hearing: this comparison tested thirty grams — a generous post-workout serving. At smaller doses — two eggs, maybe one — the absorption gap could start to matter, because the raw version might dip below the threshold the boiled version still clears. For older adults or anyone eating smaller protein servings, cooking method could become a real variable. At the dose most lifters actually eat after training, it was not.
