Toast with Crispy Bacon & Scrambled Eggs

Toast with Crispy Bacon & Scrambled Eggs

Toast with Crispy Bacon & Scrambled Eggs

Crispy on the outside, soft in the middle. Bacon shatters against your fork while the scrambled eggs stay just barely set, piled onto toasted whole wheat bread that holds its crunch underneath.

449 calories, 25 grams of protein, and nothing in the pan longer than five minutes. The kind of breakfast that feels like weekend effort on a Tuesday schedule.

Ingredients · 1 serving

  • bacon 3 slices
  • eggs 2
  • olive oil 1 tablespoon
  • bread, whole wheat 2 slices

Method · 4 min

  1. Heat a skillet over medium heat and add the bacon slices. Cook for 5 minutes or until crispy. Remove the bacon from the skillet and set aside.

  2. Crack the eggs into a bowl, add salt and pepper to taste, and whisk until the yolks and whites are well combined.

  3. In the same skillet, heat the olive oil over medium heat. Once heated, pour the eggs into the skillet and cook, stirring occasionally, until they are set but still slightly runny.

  4. While the eggs are cooking, toast the bread in a toaster or on a separate skillet.

  5. Once the eggs and toast are ready, serve them on a plate alongside the bacon slices.

Tip

Use fresh olive oil for the eggs instead of the rendered bacon fat. The bacon leaves behind fond and salt in the skillet, which seasons the eggs without you adding anything. The olive oil keeps the scramble from sticking while the residual bacon flavor does the rest.

Behind this recipe

Is 25 grams of protein enough for breakfast?

More than enough for one sitting. Research on protein distribution found that spreading total daily protein across three to four meals produced more muscle protein synthesis than loading most of it into dinner. The typical cereal-and-toast breakfast delivers 5 to 11 grams. This meal triples that without any extra time or effort.

Should I worry about 27 grams of fat in one breakfast?

Not unless it puts your total daily calories over budget. Dietary fat does not uniquely cause fat gain. Total calorie balance determines whether you store body fat, regardless of whether those calories came from bacon, olive oil, or bread. The fat here also helps you stay full longer through the morning.
