  • sweet potato 8 ounces
  • cauliflower florets 7 ounces
  • olive oil 1.5 tablespoon
  • curry powder 1 teaspoon
  • chicken breast 3 ounces
  • cream cheese, reduced fat 1.5 tablespoon
  • arugula 1 handful
  • feta cheese, crumbled 1 ounce

Method · 15 min

  1. Peel the sweet potato and cut it into cubes. Cut the cauliflower florets to be the same size as the sweet potato cubes.

  2. Bring the sweet potato and cauliflower in a large pot of water to a boil and cook until tender, about 10 minutes.

  3. Meanwhile, mix the oil with half of the curry powder in a small bowl and coat the chicken breast in this mixture.

  4. Heat a frying pan and cook the chicken breast until golden brown and cooked through.

  5. Drain the sweet potato and cauliflower. Add the cream cheese and the other half of the curry powder. Mash into a coarse puree and mix in the arugula. Season with pepper and salt.

  6. Serve the mash with the chicken. Sprinkle the feta on top.

Tip

Fold the arugula in gently after the mashing is done. The residual heat from the puree wilts the leaves just enough to soften their peppery edge without turning them limp or changing their color.
