Ingredients · 1 serving

  • couscous 3 ounces
  • cauliflower florets 7 ounces
  • dates 3 pieces
  • honey 1 tablespoon
  • feta cheese, crumbled 1.5 ounces

Method · 10 min

  1. Prepare the couscous according to the instructions on the package.

  2. Boil the cauliflower florets in a large pot of salted water for 6-8 minutes until al dente.

  3. Chop the dates into small pieces.

  4. Mix the dates, cauliflower florets, honey and half of the feta through the couscous. Season with pepper and salt.

  5. Spoon the couscous into a bowl and top with the remaining feta cheese.

Tip

The recipe splits the feta for a reason. The half that goes into the warm couscous softens and coats the grains with a salty creaminess. The half on top stays cool and crumbly. If you skip the split and mix everything at once, you lose the temperature contrast that makes the bowl work.

Can I replace the honey with something else?

Agave syrup or maple syrup work as direct swaps at the same volume. Maple adds a deeper, more caramel flavor that pairs well with feta. Agave is more neutral. The macros stay roughly the same with any of the three.
