  • steamed beets 2 pieces
  • red onion 0.5 pieces
  • yogurt, nonfat 2 fl oz
  • lemon juice 1 squeeze
  • spinach 1 handful
  • feta cheese, crumbled 2 oz
  • bread, whole wheat 2 slices

Method · 5 min

  1. Cut the beets into wedges and finely chop the onion.

  2. Whisk the yogurt with lemon juice, pepper and salt to create a dressing.

  3. In a bowl, combine the spinach with the beets and onion. Scatter the feta over the salad and drizzle with the dressing. Serve with the (toasted) bread.

Slice the red onion paper-thin. Half a raw onion sounds like a lot for one salad, but at tissue-thin thickness the sharpness spreads across every bite instead of hitting in one overwhelming chunk.
