Mexican Baby Potato Salad Bowl

Ingredients
- baby potatoes 0.5 pound
- olive oil 1 tablespoon
- paprika (ground spice) 1 teaspoon
- bell pepper 1
- corn 2 ounces
- kidney beans 3 ounces
- avocado 0.5
- mixed salad 1 handful
Method

Preheat the oven to 390°F (200°C).

Halve the baby potatoes and mix them in a bowl with the oil, paprika powder and some salt and pepper. Place the baby potatoes on a baking tray lined with parchment paper and put them in the oven. Bake the baby potatoes for 17 minutes until golden brown and crispy.

Dice the bell pepper. Rinse the corn and kidney beans in a colander with cold water and let drain. Slice the avocado.

Spread the mixed salad in a bowl. Top with the bell pepper, corn, kidney beans and avocado. Finish the bowl with the baby potatoes and serve.
Pull the potatoes from the oven and build the bowl immediately. The hot-cold contrast between blistering roasted potatoes and the cold raw vegetables only works if the potatoes go on top while they are still sizzling. Even a few minutes of resting flattens the temperature gap that makes this bowl worth building.
