Does Soy Sauce Contain Gluten From Wheat?

Regular soy sauce starts with a massive amount of wheat gluten. Roasted wheat going into the fermentation process measures around 94,500 parts per million of gluten. That is not a trace. That is a primary ingredient doing a primary job.

During fermentation, something dramatic happens to that gluten. Soy sauce goes through two stages: first a mold culture breaks the grains down, then a months-long brine fermentation finishes the job. An FDA-funded study tracked gluten levels through every stage of this process. After one month of brine fermentation, every test method came back negative. Four different antibody-based tests, four lateral flow devices, and a Western blot analysis. None of them could find gluten in the finished product. Twelve commercial soy sauces pulled from store shelves, all made with wheat, all tested the same way. Every single one came back below the detection limit.

So the science delivers a clear verdict. Except the verdict has a crack in it.

The problem is the tests themselves. The FDA has stated directly that the standard analytical methods used to detect gluten do not adequately work on fermented foods. The same antibody-based technology that found nothing in finished soy sauce is the technology the FDA says cannot be trusted to find gluten after fermentation has broken proteins apart. Undetectable is not the same thing as absent. The tests may simply be unable to recognize what gluten becomes after months of microbial digestion.

This is why the regulation and the science point in opposite directions. The science measured zero. The regulation says the measurement tool is unreliable. Both are correct, and that combination is exactly why every source you have read told you something contradictory.

The FDA's response was categorical. Soy sauce made from wheat cannot carry a "gluten-free" label, regardless of what post-fermentation tests show. The only way a fermented product earns that label is if the ingredients were already below 20 parts per million before fermentation even started. The fermentation process itself is not recognized as a method of gluten removal.

This is also where the global picture fractures. The Norwegian, Swedish, and Finnish celiac associations have looked at the same science and reached the opposite conclusion.
