Flip a bottle of soy sauce around and read the back. Second ingredient, right after water: wheat. If you follow a gluten-free diet, that word does something immediate. It moves the bottle from the "safe" side of your counter to the "not sure" side.
And then the conflicting advice starts. One source says fermentation removes the gluten. Another says wheat means avoid it. A third says it depends on the brand. You came here because none of those answers explained the actual science behind the question.
Does Soy Sauce Contain Gluten From Wheat?
Regular soy sauce starts with a massive amount of wheat gluten. Roasted wheat going into the fermentation process measures around 94,500 parts per million of gluten. That is not a trace. That is a primary ingredient doing a primary job.
During fermentation, something dramatic happens to that gluten. Soy sauce goes through two stages: first a mold culture breaks the grains down, then a months-long brine fermentation finishes the job. An FDA-funded study tracked gluten levels through every stage of this process. After one month of brine fermentation, every test method came back negative. Four different antibody-based tests, four lateral flow devices, and a Western blot analysis. None of them could find gluten in the finished product. Twelve commercial soy sauces pulled from store shelves, all made with wheat, all tested the same way. Every single one came back below the detection limit.
So the science delivers a clear verdict. Except the verdict has a crack in it.
The problem is the tests themselves. The FDA has stated directly that the standard analytical methods used to detect gluten do not adequately work on fermented foods. The same antibody-based technology that found nothing in finished soy sauce is the technology the FDA says cannot be trusted to find gluten after fermentation has broken proteins apart. Undetectable is not the same thing as absent. The tests may simply be unable to recognize what gluten becomes after months of microbial digestion.
This is why the regulation and the science point in opposite directions. The science measured zero. The regulation says the measurement tool is unreliable. Both are correct, and that combination is exactly why every source you have read told you something contradictory.
Traditional soy sauce is made from wheat, but fermentation degrades gluten to undetectable levels across every available test. The FDA's response was categorical. Soy sauce made from wheat cannot carry a "gluten-free" label, regardless of what post-fermentation tests show. The only way a fermented product earns that label is if the ingredients were already below 20 parts per million before fermentation even started. The fermentation process itself is not recognized as a method of gluten removal.
This is also where the global picture fractures. The Norwegian, Swedish, and Finnish celiac associations have looked at the same science and reached the opposite conclusion. They advise that traditionally brewed soy sauce is safe for people with celiac disease. The FDA disagrees. Neither side is ignoring the evidence. They are weighing the testing uncertainty differently.
The practical answer, then, has two paths. If you are managing celiac disease or strict gluten avoidance, tamari is the unambiguous alternative. Traditional tamari is made with little to no wheat. Certified gluten-free soy sauces exist that either use no wheat or verify gluten levels before fermentation. These do not rely on post-fermentation testing, so the measurement gap does not apply.
If you avoid gluten by preference rather than medical necessity, the science tells you that traditionally brewed wheat-based soy sauce contains no detectable gluten by any current method. Whether "no detectable gluten" is good enough is a decision the evidence lets you make for yourself, not one FitChef or any other source can make for you.
That testing gap reaches into every fermented product on your shelf. Every fermented food on your shelf lives in the same uncertainty. The tests that struggle with soy sauce struggle with any product where fermentation has broken proteins into smaller fragments.
