Apple sauce cooked in a cast iron pot wound up with 35 times more iron than the same sauce from a regular pot. Meat and vegetables roughly doubled their iron content. Peas gained about 3.3 times more. Legumes saw a more modest bump of about 1.5 times.
Acidity explains the range. Acidic foods — tomato sauce, lemon water, apple sauce — strip iron from the pan's surface with every minute of contact. A well-seasoned skillet cooking scrambled eggs transfers almost nothing, because the polymerized oil layer blocks contact between the food and the bare metal underneath.

Whether the effect is as striking in someone eating a varied diet with adequate iron is something no study has tested head-on. And seasoning your pan over time reduces leaching, which means the iron transfer is highest in a new or stripped pan and diminishes as the cooking surface builds up.
