Low-Carb Taco Salad

Ingredients
- olive oil 1 tablespoon
- 96% lean ground beef 3 ounces
- paprika (ground spice) 1 teaspoon
- ground cumin 0.5 teaspoon
- chili powder 1 pinch
- cherry tomatoes 8
- cucumber 0.5
- scallion 1
- iceberg lettuce, shredded 1 handful
- grated cheese 2 ounces
- yogurt, nonfat 1 tablespoon
- bread, whole wheat 2 slices
Method

Heat the oil in a frying pan and add the ground beef and spices. Cook the ground beef until done and let it cool slightly.

In the meantime, halve the cherry tomatoes. Dice the cucumber. Slice the scallion into rings.

Put the lettuce in a bowl and top it with the tomatoes, cucumber, scallion and cheese. Add the ground beef to the salad and dollop the yogurt on top. Season with pepper and salt.

Serve the salad in a deep plate and serve with the (toasted) bread.
Let the ground beef cool for two to three minutes after cooking before adding it to the salad. Beef straight from the pan wilts the iceberg on contact and melts the cheese into a flat layer — slightly cooled beef keeps the lettuce crisp and the cheese textured.
