It doubled something nobody expected.
Two teams — one at UC Davis, one at the University of Georgia — tested what happens to nutrients when produce is frozen versus kept fresh. Across eight common vegetables and fruits and eleven different nutrients, frozen matched or beat fresh for almost everything.
For vitamin C, the result was perfectly consistent: not a single vegetable lost vitamin C from freezing. Calcium and copper didn't move at all across any of the eight produce items.
But the real surprise sat in the vitamin E data. Frozen peas measured more than double the vitamin E of their fresh counterparts. Frozen green beans showed the same pattern — roughly two to three times the measurable levels.
The explanation traces to something that happens before anything touches the freezer: blanching. Frozen vegetables from the store get a quick steam before they're sealed. That heat seems to make vitamin E easier to measure inside the food. The researchers flag this as a likely reason, not a proven one.
The same step causes minor iron leaching in spinach and carrots. But the net effect across all eleven nutrients is neutral to positive. The process you never thought about was quietly working in frozen's favor.
The One Nutrient That Doesn't Hold
There is a genuine exception, and it changes the math for one specific group of vegetables.
Beta-carotene — the orange pigment in carrots, spinach, and peas — dropped 50 to 68 percent after three months of frozen storage. Peas lost over two thirds. Spinach lost more than half. These weren't marginal declines.
The data was measured at day zero, day ten, and day ninety — with nothing in between. That gap matters: frozen carrots used within a few weeks likely keep far more than the ninety-day number suggests. Within the studies we examined, that middle portion of the curve was not tested.
This is the honest carve-out. For most nutrients, the freezer holds steady for months. For beta-carotene specifically, the clock is ticking once the bag is sealed — and three months is too long.

Fresh-stored green beans had 40 percent less vitamin C than frozen. Corn fared worse: 54 percent less beta-carotene than frozen. Peas, blueberries, and corn all showed significantly less folate.
