For eight weeks, while eating a controlled balanced diet provided by the research team, the participants took a resistant starch supplement. They lost an average of 2.81 kilograms compared to a placebo group who gained half a kilo — a gap so consistent the researchers calculated less than a one-in-a-thousand chance it was random.
That is a legitimate result from one of the most respected journals in metabolic science.
But the participants didn’t eat cold rice.
They didn’t cool anything, reheat anything, or meal-prep anything. Twice a day, before meals, they mixed a sachet of purified corn starch powder into a glass of water and drank it. The product — an industrial ingredient made from high-amylose corn — is a type of resistant starch that exists naturally in raw, uncooked grains. Scientists call it RS2.
When you cool cooked rice, something different happens. The starch molecules re-crystallize as the food cools, forming a different compound — RS3. Same word on a nutrition label. Different chemistry in your gut.

To match that from the extra resistant starch created by cooling rice — just the bonus from refrigerating it — you would need to eat roughly 900 grams of cooled rice every single day.
That’s about four and a half packed cups. Every day. On top of whatever else you eat.
A typical serving of rice at dinner is 150 to 200 grams. Nine hundred grams would mean rice at every meal, with second helpings, every single day. The Nature Metabolism participants got their 40 grams from two pre-measured sachets of powder dissolved in water.
The Engine Your Gut Might Not Have
Even if someone matched the dose, a second layer of the study’s findings suggests it still might not work.
The researchers ran what might be the cleanest experiment in the entire paper. They took the same resistant starch and gave it to mice raised in a completely sterile environment — no gut bacteria at all.
Nothing happened. No weight loss, no improvement in blood sugar, no change in insulin sensitivity. The starch passed through like any other carbohydrate.
Then they added a single bacterial species — Bifidobacterium adolescentis — and gave the same mice the same starch again. This time, the mice on resistant starch lost significant weight compared to controls.
Same starch. Same dose. The only variable was one species of bacteria.
Of the 27 participants whose gut bacteria were sequenced, only 9 had B. adolescentis at baseline — about a third. Research suggests the species is present in 60 to 80 percent of healthy-weight adults. The population most interested in a weight-loss hack may be the least likely to carry the bacterium that makes it work.
You can’t easily check whether you have it. The study’s strongest mechanistic finding — that resistant starch works through specific gut bacteria — is also the finding that’s hardest for any individual person to act on.
The resistant starch didn't just affect weight — it repaired the gut lining itself. Tight junction proteins that seal the intestinal wall increased, while bacterial toxins leaking into the bloodstream dropped.
What Happened When They Stopped
The study had a built-in honesty check. Every participant took the supplement for eight weeks and the placebo for eight weeks, in random order, with a four-week break in between. The researchers watched what happened during that break.
The weight came back. In the group that took resistant starch first, every obesity-related measurement reverted to where it started during the washout period. The kilograms the supplement removed were the same kilograms that returned when it stopped.
Then there’s the condition the viral version never mentions. Three earlier trials — Robertson in 2012, Johnston in 2010, and Maki in 2012 — tested resistant starch without controlling what participants ate the rest of the day. All three found zero weight loss from resistant starch.
The Nature Metabolism trial worked, at least in part, because the researchers controlled the entire background diet — balanced meals with 25 to 30 percent of calories from fat, provided to every participant. When rodents eat high-fat diets, their gut bacteria struggle to break down resistant starch effectively. The hack tells people to cool their rice while eating whatever they want.
If the science never tested cooled rice for weight loss, where did the bigger claim even start?
Where the 50% Claim Started
The calorie reduction number that circulates most — roughly 50 percent fewer calories from cooled rice — traces to a 2015 presentation at an American Chemical Society conference by Sudhair James, an undergraduate chemistry student from Sri Lanka.
He never published the work in a peer-reviewed journal.
James tested 38 rice varieties cooked with coconut oil — a step the viral version dropped entirely. Coconut oil creates yet another type of resistant starch, formed when fat molecules bind with starch during cooking. His 50 to 60 percent figure was the best result from the best-performing variety under the most favorable conditions. Not the average, and not without the oil.
By the time his unpublished poster became a TikTok talking point, the coconut oil was gone, the conditionality was gone, and the 50 percent applied to all rice, all conditions, all the time.
The cold rice hack shares a lineage with other viral nutrition numbers that outrun their evidence. The most-cited turmeric claim — that black pepper boosts absorption by 2000% — traces to a single 1998 study of eight men, co-authored by the patent holder of the product it tested. Four independent labs have tried to reproduce it over 27 years. None succeeded.

Cooling rice does create resistant starch. The effect is real, and it has been measured.

The rice hack is a real effect dressed up as a meaningful one. Twenty calories per serving is the honest number most articles won’t give you. It is also the number that puts the viral version in perspective.

Before you change anything
Thirty-seven Chinese adults in Shanghai, aged 18 to 55, with a BMI averaging around 28.5. None had diabetes or thyroid conditions. All received hospital-provided meals with 25 to 30 percent of calories from fat.
Whether the same resistant starch supplement produces the same weight loss in different populations — older adults, people with diabetes, those eating unrestricted diets — has not been tested.
The controlled diet is both the study's strength and its biggest caveat. The researchers eliminated background diet as a variable, which is exactly why the supplement worked — but nobody eats a researcher-provided diet in real life.
Thirty-seven participants is a small sample for drawing broad conclusions about weight loss. The study ran at a single site in Shanghai, and the crossover design assumes effects fully wash out in four weeks — the washout data suggests this assumption holds, but the margin is thin.
The mechanistic evidence is remarkably thorough. Human trial, mouse models, germ-free experiments, fecal transplants, single-species colonization — five layers of evidence pointing in the same direction, published in Nature Metabolism.
The weight loss result rests on one trial of 37 people. The metabolic improvements are better supported — 36 independent trials confirm RS2 affects blood sugar. But the specific claim that RS2 causes meaningful weight loss at 40 grams per day has been tested exactly once, under ideal conditions.
The resistant starch story hinges on a gap between what a food contains and what your body does with it. That gap runs through every study in this cluster — and it gets stranger.
In one trial, researchers served the exact same salad with two different dressings. The nutrients were identical going in. The amount the body absorbed was not even close.
