Design: Within-subject measurement in a temperature-controlled, darkened, silent laboratory using indirect calorimetry (SensorMedics 229). Seven non-obese subjects with stable weight were measured seated at rest (30 min baseline), then during 12 minutes of chewing calorie-free gum at 100 Hz (metronome-paced), then 12 minutes post-chewing.

Key findings: Mean energy expenditure increased from 58±11 kcal/hr at baseline to 70±14 kcal/hr during chewing (P<0.001), returning to baseline (59±12 kcal/hr) after chewing. Mean increase: 11±3 kcal/hr (range 7–17), a 19±4% increase. In the same subjects: standing = 11±11% increase, walking 1.6 km/hr = 106±26% increase.
