Phytates bind to protein. That much is true. The compound shows up naturally in beans, lentils, whole grains, and most plant-based foods, and it latches onto protein molecules before you even take a bite.
But the word people use for what happens next — “block” — paints the wrong picture. Phytates don’t build a wall between your food and your muscles. What they do is messier, more layered, and far less dramatic than the argument makes it sound.

They interfere through at least four routes at once. Some protein-phytate bonds form inside the food before digestion even starts. Others form during digestion itself, creating new complexes that resist breakdown. Phytates also dampen the enzymes your gut relies on to split protein apart. And they increase the amount of your body’s own protein that gets lost in the process.
The combined effect is measurable. When researchers compared a plant protein blend to milk protein in young men who lift, the plant blend delivered roughly half the essential amino acids over five hours. That is not a trivial difference. That is the kind of gap that should show up in your muscles.
Except it didn’t. The actual muscle-building response was not significantly different between the two groups. The amino acids showed up in smaller quantities, but the muscle responded almost identically. The absorption gap was real. The outcome gap was not.

One reason: the plant proteins in that trial were isolates and concentrates, not whole foods. The manufacturing process that turns a soybean or a pea into a powder strips out phytates along with most other compounds that slow digestion. The protein shake sitting in your gym bag has already been through the fix.
What you eat whole is a different equation. The results may not translate directly to meals built from whole lentils, black beans, or unprocessed grains, where phytates and other compounds that slow digestion stay intact. Cooking, soaking, and fermenting reduce phytate content substantially, but they don’t eliminate it. Whole-food plant protein likely faces a larger absorption penalty than the isolates in the study — and phytates are only one of several reasons plant protein digests differently.
