Ingredients
- red onion 0.5 piece
- cherry tomatoes 5 pieces
- olive oil 1.5 tablespoon
- 96% lean ground beef 3 ounces
- paprika (ground spice) 1 teaspoon
- tortilla wraps, whole wheat 2 pieces
- cheddar cheese, shredded 1.5 ounce
Method

Slice the red onion into thin rings. Cut the tomatoes into wedges.

Make a salad with the tomato wedges, half of the onion rings and season with pepper and salt to taste. Set the salad aside for a moment.

Heat half of the oil in a skillet and cook the ground meat with the remaining red onion, paprika and season with pepper and salt to taste. Cook until crumbly and done, about 5 minutes.

Brush the wraps very lightly with the remaining oil. Place the first wrap oil-side down on a plate. Sprinkle half of the cheese on it. Distribute the meat mixture over the wrap and sprinkle with the rest of the cheese. Now place the last wrap on top (oil-side up).

Heat a frying pan and cook the quesadilla on low heat until golden brown, about 3 minutes. Flip the quesadilla in the pan and cook for another 3 minutes.

Serve the quesadilla with the tomato salad.
Cook the quesadilla on genuinely low heat for the full six minutes. Higher heat burns the tortilla before the cheddar melts through to seal both wraps together. Low and slow means crispy outside, molten cheese from edge to edge.
