Soak your beans overnight. Drain the water. Rinse. Cook in fresh water.
The instruction arrives from a parent, the back of a bag, a recipe blog's italicized note before step one. It sounds confident. Specific enough to follow, vague enough that nobody asks questions.
Ask why each of those steps matters, and the confidence disappears. Something about gas. Something about nutrients leaving. Food blogs fill the gap with a number: soaking removes 75 to 90 percent of the compounds that cause bloating. The number circulates everywhere, cited from nowhere.
Does Soaking Beans Actually Reduce Bloating and Gas?

The reason beans cause gas when other foods don't is specific. Your body is missing an enzyme that digests a group of sugars found almost exclusively in legumes. Without that enzyme, those sugars pass through your small intestine completely intact. When they reach your large intestine, bacteria ferment them, and the byproducts are hydrogen, carbon dioxide, and methane. That's the gas.
Soaking works because those sugars are water-soluble. They leach out of the bean and into the soak water. When researchers measured exactly how much leaches out during a standard overnight soak followed by cooking, the reduction ranged from 25 to 42 percent — depending on which of the three sugars they measured. Meaningful. Noticeable. And roughly half of what food blogs have been claiming.
Here's the part most instructions leave out. Those reductions only happened when the soak water was discarded — poured down the drain, not used for cooking. When the beans were cooked in the same water they soaked in, the sugars that had leached out went right back in. One compound among the three didn't just return to its original level. It increased by 20 percent. The bean's own enzyme, activated by soaking, had broken larger sugars into smaller ones, producing more of the compound that causes the most gas.
The protocol that produced the best measured results: soak for at least 12 hours, discard the water, rinse, cook in fresh water. Cooking alone, without soaking, also reduces those sugars — by about 20 to 33 percent — so every preparation step helps. The honest ceiling is that soaking is a lever, not a switch. A quarter to nearly half of the gas-causing compounds remain, which is why some gas after a bean meal is the expected outcome of partial reduction, not a sign the soaking failed.
One caveat worth sitting with: these specific percentages come from a single bean variety under specific soaking conditions. Different beans, different temperatures, different soak times will shift the numbers. The direction holds — soaking and discarding reduces gas-causing sugars — but the exact percentage is a range, not a guarantee.
Beans carry a second compound that responds to the same soak-and-discard step: phytic acid, which can reduce how much iron, zinc, and calcium you absorb from the meal. The gas story and the mineral story share the same kitchen solution, but the mechanisms are completely different. That second story — whether anti-nutrients actually block mineral absorption, and by how much — is its own evidence trail.
