One number broke the tie. Calcium in raw salmon tissue: 6 to 13 milligrams per 100 grams. Calcium in canned salmon with bones: 221 to 277 milligrams. The can didn't match the fillet. It delivered 17 to 46 times more calcium.
The gap exists because of how canning works. A fresh fillet reaches your kitchen deboned — the calcium-rich skeleton goes to waste. Canned salmon is processed whole, bones and all. Heat and pressure during canning soften those bones until they dissolve into the flesh, turning skeletal waste into bioavailable calcium you eat without noticing.

FDA's dietary guidance draws the same line the data does: none. When the agency lists its recommended "Best Choices" for fish, it names canned salmon, frozen fish, and fresh fish as interchangeable alternatives — no ranking, no nutritional asterisk. Canning is preservation, not degradation, and the evidence extends beyond fish.
