Ingredients

  • 3 ounces noodles, whole wheat (84 g)
  • 3 ounces chicken breast (84 g)
  • 1 clove garlic (5 g)
  • 1 slice ginger
  • 1 tablespoon soy sauce (15 ml)
  • 1 teaspoon honey (7 g)
  • 1 tablespoon vinegar (15 ml)
  • 1 tablespoon olive oil (15 ml)
  • 1 cup broccoli florets (frozen) (71 g)
  • 1 carrot
  • 1 bell pepper

Preparation

  1. Cook the noodles according to package instructions. Set aside.
  2. Slice the chicken breast into thin strips and chop the garlic and ginger finely.
  3. Whisk together soy sauce, honey, vinegar, ginger, and garlic in a small bowl to make the teriyaki sauce.
  4. Heat oil in a skillet over medium-high heat. Cook the chicken for 5 minutes until done.
  5. Cut the broccoli into bite-sized pieces and thinly slice the carrot and bell pepper. Stir-fry them in the same skillet for 3–4 minutes until crisp-tender.
  6. Pour the teriyaki sauce over the chicken and vegetables. Stir to coat.
  7. Add the cooked noodles to the skillet. Toss to combine.
  8. Cook for 2–3 more minutes until heated through.
